Apple chicken salad

Ingredients:

12 ounces boneless chicken breasts, baked or poached, chopped 1/2 cup finely chopped apple,1/4 cup finely chopped green onion,1/4 cup sour cream,1/4 cup mayonnaise,,1 tsp coriander,1/2 tsp salt,1/8 tsp pepper,36-40 mini pastry shells , baked chopped green onion for garnish

Combine first 8 ingredients, stirringwell. Cover and chill for least one hour. Prepare pastry shells and fill each one. Garnish with green onion .

2 cups all purpose flour, pinch of salt, 1/2 cup shortening, 1/2 cup butter, well chilled 4 to 5 tbsp cold water.

Method:

Preheat oven 450 degree. Mix together flour and salt. With a pastry blender cut butter and shortenings into flour until mixture resembles a coarse meal. Add cold water a little at a time, until mixture is moist enough to form a ball. Do not over mix. Cover and chill for 15 minutes. On a floured surface, roll out pastry with floured rolling pin. Grease mini muffin tins. Cut pastry into 3-inch circles and press each circle into a muffin cup. Bake for 8 minutes. Cool completely.
