
The traditional elegant custards of Italy are world famous. But the aura around them makes us believe that it might be very difficult to make. Well, it actually is not so. Though there are a wide variety of custard preparations, the simplest ones are easy to attempt.
Lemon and buttermilk are good for health and also easy to digest. And, the custard made of these ingredients has an unique flavour which will be hard to resist anytime. So, go ahead and enjoy the new custard flavour.
For 8 servings
1/4 cup fresh lemon juice
2 teaspoons unflavored gelatin
1 1/4 cups heavy cream
1/2 cup granulated sugar
1 1/2 teaspoons finely grated lemon zest (coloured portion of peel)
2 cups low-fat buttermilk
1/2 teaspoon vanilla
Place lemon juice in small bowl. Sprinkle gelatin over lemon juice. Let stand 5 minutes to soften gelatin.
Place the cream, sugar and lemon zest in a heavy, medium saucepan over medium-high heat. Bring it to simmer stirring until sugar dissolves. Then remove from heat and add the gelatin mixture. Whisk until dissolved. Then whisk in buttermilk and vanilla till it blends well.
Pour the mixture into a mould and loosely cover with plastic wrap; chill 4 hours or as long as overnight.
Just before serving, cut around the edges with a knife to loosen. Set the mould in a shallow bowl of hot water for 10 seconds. Immediately invert onto a plate.
The gracious Italian custard is ready to be served!
